The artisan advantage

From lab to door, handled by one grower

Peak freshness, transparent sourcing, and varieties chosen for flavour and texture.

01

Harvested to Order

I don’t store mushrooms in cold distribution warehouses. I coordinate directly with kitchens to harvest clusters at their absolute peak and run local delivery routes so they arrive unbruised and structurally intact.

02

Certification in progress

While our mushrooms are not yet certified organic, we have started the certification process. We already grow on grain and substrate pellets that are certified organic by our suppliers, and we're happy to share their certificates on request.

03

What's in them

Oyster mushrooms are low in fat and sodium, and a natural source of potassium, copper and B vitamins, including niacin (vitamin B3). Niacin contributes to the reduction of tiredness and fatigue. Mushrooms are also among the richest food sources of ergothioneine, a naturally occurring amino acid. We grow year-round in climate-controlled rooms.

The varieties

Clean, intense gourmet mushrooms

Meaty, chicken-like Pink Oysters, thick-stemmed Black Pearls, and Lion’s Mane with a texture that recalls lobster or crab. Grown here in Marbella, year-round.

Blue oyster

Pleurotus ostreatus

Deeply savoury and earthy, with subtle anise notes when young. Dense and meaty, good for searing or braising.

Grows wild on dead hardwood in temperate forests worldwide · sear hard or braise, it holds its shape

Pink oyster

Pleurotus djamor

Mild, woody, and slightly sweet with a chicken-like bite; crisp slices echo savoury bacon.

A tropical species that fruits best in warm rooms; its pink fades when cooked · fry crisp for a bacon-like bite

Yellow oyster

Pleurotus citrinopileatus

Highly aromatic and delicate, with light notes reminiscent of dry-roasted cashews.

Native to the forests of eastern Asia and Russia; very fragile, so it travels best straight from harvest · add at the end of cooking

Black pearl

Pleurotus ostreatus hybrid

Thick, dense, succulent stem. Think king oyster or scallop, with a potent umami crown.

A cultivated hybrid bred for its thick, dense stem · slice it into medallions for the grill

Lion’s mane

Hericium erinaceus

Sweet, clean, and stringy. A lot like lobster, crab, or minced shrimp.

Grows cascading spines instead of gills, usually on old oak and beech · tear, press and sear like crab cakes

The story

Behind FungiMarbella

I started this farm with a clear mission: to supply the freshest, highest-quality gourmet mushrooms on the coast, harvested directly to order so they arrive intact and at their peak. My background is in ecology and advanced cultivation methods. After studying Marine Biology and Coastal Ecology in the UK, I focused on homesteading projects, including building experimental indoor systems to test aeroponics and fogponics (the same tech researched for resource management in space travel).

I eventually shifted my focus entirely to mushrooms. Cultivating gourmet varieties allows me to combine data-driven climate automation with clean, careful production. I handle everything myself: cloning top-performing strains in a sterile lab, mixing my own custom substrate blocks for the Marbella climate, then hand-harvesting every batch and delivering it myself.
